Ingredients
- Beef Roast: 3-4 pounds (chuck or brisket)
- Onions: 3 large yellow or sweet onions, thinly sliced
- Beef Broth: 2 cups
- Garlic: 4 cloves, minced
- Thyme: 1 teaspoon dried or 4 fresh sprigs
- Bay Leaves: 2
- Butter: 2 tablespoons
- Olive Oil: 2 tablespoons
- Salt and Pepper: To taste

Instructions
- Sear the Beef
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Season the beef roast with salt and pepper, then sear for 3-4 minutes on each side until browned. Remove and set aside.
- Caramelize the Onions
- Reduce the heat to medium and add butter to the skillet.
- Add sliced onions, cooking for 15-20 minutes until golden and fragrant. Stir occasionally to prevent burning.

- Combine Ingredients
- Place the seared beef in a Dutch oven or slow cooker.
- Add the caramelized onions, beef broth, thyme, and bay leaves.
- Cook Until Tender
- Dutch Oven: Cover and bake at 325°F (160°C) for 3-4 hours.
- Slow Cooker: Cook on low for 8-9 hours or on high for 4-5 hours.
- Serve
- Remove the beef, slice it, and serve with the onion gravy over mashed potatoes, roasted vegetables, or crusty bread. Garnish with parsley if desired.
