Description

Ingredients

  • 200g rolled oats
  • 75g coconut oil
  • 100ml maple syrup or agave nectar
  • 50g brown sugar or coconut sugar
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • Optional: dried fruits, nuts, seeds, or dairy-free chocolate chips

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tin with parchment paper.
  2. Melt the coconut oil in a saucepan over low heat, then stir in the maple syrup and sugar until combined.
  3. Mash the bananas in a bowl and add the vanilla extract.
  4. Combine the wet and dry ingredients, mixing until fully coated. Add optional ingredients if desired.
  5. Press the mixture into the prepared tin, smoothing the top.
  6. Bake for 20–25 minutes or until golden brown.
  7. Allow the flapjacks to cool completely in the tin before slicing.

Notes

  • For gluten-free flapjacks, use certified gluten-free oats.
  • To store, place in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
